This is The Best Garlicky Creamy Spinach (Low FODMAP) that you will ever have! I learnt it from my Mum, when she was picking her own spinach from the garden and preparing as a side dish for dinner. But her recipe included lots of garlic, which in here is replaced by Garlic Infused Olive Oil by Fody, that I truly love, because it is so versatile. It still gives some garlic flavours, without adding the symptoms.

INGREDIENTS FOR THE BEST GARLICKY CREAMY SPINACH (Low FODMAP), 2 PORTIONS:

1 tbsp Garlic Infused Olive Oil by Fody

 

300 g bag of fresh spinach

 

4 tbsp. full fat crème fraiche

 

Salt, pepper to taste

THE BEST GARLICKY CREAMY SPINACH – INSTRUCTIONS TO PREPARE:

Preheat a medium pot on a medium heat. Pour 1 tbsp of infused oil in the pot.

 

You can get already washed fresh spinach, so just place the whole bag’s content in the pot. It might not fit inside, but the spinach will quickly wilt. Mix the spinach, so it is cooked quickly and evenly.

 

When all of the spinach is just cooked – it takes just about a minute or two – season it and and the creme fraiche. Mix again, cook for a minute and turn off the heat. Make sure you don’t overcook the spinach, because it will lose the flavour and nutrients. It is the best when it is just cooked.
