This tomato, spinach and herb salad (low FODMAP) is a great, healthy breakfast or a light lunch. I added fresh thyme and spring onion, but you can add nearly any fresh herbs that you like (maybe apart from the rosemary, which has strong flavours). And if you have a herb garden, then you can pick the herbs that you like, for example basil, parsley, oregano…Just remember with the spring onion to add only the green part.
When choosing the fresh spinach, try to find the most crunchy one. I picked this one straight from the garden t the plate and I have to say that the texture was completely different from this spinach that you buy in the supermarket in a big packaging. This one was early as crunchy as an iceberg lettuce! I understand that not all of you have a veggie garden, but just if you chose a spinach from the market or a greengrocer as opposite to the supermarket, as a rule it should be better.

Above is my tomato, spinach, cucumber and herb salad for breakfast, with addition of spelt bread with cheese and a simple lactose free milk coffee. Sometimes simplicity is the best to enjoy the flavours of a good quality ingredients! Especially that they are so good at this time of the year, for example tomatoes. They are ripe, sweet and full of flavour.

“Super tasty, fresh and low calorie salad!”

Ingredients for a Tomato spinach and herb salad (low FODMAP), 1 portion:
120 g fresh tomatoes
100 g cucumber
1 tsp. fresh thyme
1 piece of spring onion, green part only
1/4 cup baby spinach
10 sprays of an olive oil spray
1/2 tbsp. lemon juice
a pinch f salt
a pinch of black pepper

Instructions to prepare a tomato spinach and herb salad (low FODMAP):
Simple!
First, wash all of the vegetables and herbs.
Layer the spinach in the bowl. Top it with a chopped tomato and cucumber.
Pick small leaves from the thyme stalks. Chop the green part of a spring onion. Add both to the salad.
Squeeze some of the lemon juice on the salad, spray with an olive oil, season to taste and mix it all.
