Tomato spinach and herb salad (low FODMAP)

This tomato, spinach and herb salad (low FODMAP) is a great, healthy breakfast or a light lunch.

Ingredients
  

  • 120 g fresh tomatoes

  • 100 g cucumber

  • 1 tsp. fresh thyme

  • 1 piece spring onion, green part only

  • 1/4 cup baby spinach

  • 10 sprays olive oil spray

  • 1/2 tbsp lemon juice

  • a pinch salt
  • a pinch black pepper

Equipment

  • knife, medium bowl, chopping board

Method
 

  1. Simple!
    First, wash all of the vegetables and herbs.


  2. Layer the spinach in the bowl. Top it with a chopped tomato and cucumber.

  3. Pick small leaves from the thyme stalks. Chop the green part of a spring onion. Add both to the salad.

  4. Squeeze some of the lemon juice on the salad, spray with an olive oil, season to taste and mix it all.

  5. Enjoy!
