Preheat a medium pot on a medium heat. Pour 1 tbsp of infused oil in the pot.
You can get already washed fresh spinach, so just place the whole bag's content in the pot. It might not fit inside, but the spinach will quickly wilt. Mix the spinach, so it is cooked quickly and evenly.
When all of the spinach is just cooked - it takes just about a minute or two - season it and and the creme fraiche. Mix again, cook for a minute and turn off the heat. Make sure you don't overcook the spinach, because it will lose the flavour and nutrients. It is the best when it is just cooked.
