This is very easy to make, warming low FODMAP parsnip soup with spices. Perfect for autumn lunch or as a starter

Ingredients for 3 servings of a low FODMAP parsnip soup with spices :
500 g parsnips
50 g leek, green part only
salt, pepper, to taste
1/2 tsp. coriander powder
1/2 tsp. cumin powder
100 ml semi skimmed lactose free milk
pinch of paprika, either sweet or hot, it is your choice, to garnish on top
Instructions for 3 servings of low FODMAP parsnip soup with spices:
Peel the parsnips, chop and put in the medium pot with water, just enough to cover the parsnips.
Finely chop the leek and add it to the pot.
Add some salt and pepper, bring to the boil, simmer for 30 minutes.
Add coriander and cumin powder, which you can adjust to taste. But be careful, because it is easy to add to much and spices flavour can overcome the parsnips.
Blend with a hand blender, add milk to make it more creamy.
Serve in a nice bowl, with a pinch of paprika.
You can also serve it with a Low FODMAP bread croutons.
