This is a very easy salad, created by necessity. I was craving some crunchy vegetables today and that is what I made, a Low FODMAP colourful salad with cucumber, kale, radishes and peppers.
It is low in calories and it provides you quite a big portion, as well as around 2 portions of vegetables.

Ingredients for 2 servings of a Low FODMAP colourful salad:
70 g round lettuce
70 g cucumber
3 radishes
3/4 cup of raw kale
100 g red pepper
40 g yellow pepper
Instructions for 2 servings of a Low FODMAP colourful salad:
Wash all vegetables and place lettuce leaves in a medium bowl.
Slice peppers in strips.
Slice radishes and cucumber.
Remove the hard stalk from the kale, chop it small.
Mix in a bowl. Serve.
Note: this recipe doesn’t include a dressing. If you miss a dressing in it (I don’t), then sprinkle some lemon juice and extra virgin olive oil, but this will change the nutritional value.
