Low FODMAP Sourdough French Toast

If you like sourdough bread, you will love this Low FODMAP sourdough French toast. Especially because it give you opportunity to use up a stale bread. After dipping it in the egg, it will become moist and fluffy.

Ingredients for 1 portion of a Low FODMAP Sourdough French Toast:

80 g (2 slices) Sourdough spelt bread. You can use up stale bread, after dipping in the egg and frying, it will be fluffy and moist!
1 large egg
pinch of smoked paprika
1 red tomato (113 g)
1/2 tbsp fresh parsley
olive oil 1/2 tsp or less, to drizzle on tomatoes
5x olive oil spray, for frying bread

Instructions for 1 portion of a Low FODMAP Sourdough French Toast:
Mix egg with a fork.
Dip 2 slices of sourdough bread in the egg, fry on a non stick pan, using oil spray.
Slice tomato, drizzle with olive oil, and pinch of salt and pepper, also sprinkle cut parsley on top.
