Makes 20 meatballs

Ingredients for a Low FODMAP chicken meatballs with coconut:

350 g chicken breast
1 carrot, grated
1 egg
100 g fresh, shredded cocount
1 tbsp curry powder (Make sure is Low FODMAP. You can always make your own mix).
1/2 tsp. salt
10 g fresh coriander

10 g coconut oil

 

Instructions for a  Low FODMAP chicken meatballs with coconut:

 

Mix all ingredients, make 20 meatballs, fry in coconut oil for 7 minutes, then cover and cook for further 6-8 minutes.
Can be frozen and are best eaten as a healthy snack, when you feel like something savoury.
