I know that this might sound a bit weird for an English speaking world, but this cucumber Low FODMAP soup is very tasty! There is one condition for you – you must like fermented cucumbers in brine. And, of course it is the best to make them yourself, to omit the garlic, which usually floats in a brine with cucumbers.

Ingredients for 6 servings of this Low FODMAP soup:
2 regular carrots (122 g)
100 g parsnip
400 g potatoes
100 g celeriac
250 g chicken leg, without skin
100 g leek, green part only
2 bay leaves
2 allspice balls
salt, pepper to taste.
300 g fermented cucumbers in brine (“ogórki kiszone”), homemade to make sure there is no added garlic in the brine.
100 g sour cream, lactose free
fresh dill, to serve on top
Instructions for 6 servings of cucumber Low FODMAP soup:
Put the meat, bay leaves and allspice to a large pot, with water enough to cover it.
Simmer for 1 h.
Add chopped or grated vegetables to the pot. Cook on low for 45 min.
In the same time, grate the fermented cucumbers and simmer them in a little bit of water, for 30 min.
Then add the cucumbers to the big pot, simmer for 5-10 minutes, season and serve with a dollop of sour cream (lactose free) and a chopped fresh dill.
