I found this recipe in a Polish “Kuchnia Dietetyczna” book (“Diet Cuisine”).
Those Low FODMAP chicken legs baked in oats are very easy to make and oats give a nice, crunchy outside layer.

Ingredients for 2 Low FODMAP chicken legs baked in oats:
2 pieces skinless chicken leg quarter
60 g porridge oats
1 tbsp. fresh rosemary
salt, pepper to taste
1 egg white
Instructions for 2 Low FODMAP chicken legs baked in oats:
- Preheat then oven at 200 degrees C.
- Mix oats with rosemary, salt and pepper.
- Dip meat pieces in the egg, then in oats.
- Bake for 45 minutes to an hour. Make sure that the meat is cooked through before serving.
