This Low FODMAP orange infused polenta porridge can be an easy to eat breakfast or a dessert. It is a nice alternative to a smooth oat porridge (gluten free as well) or semolina (which isn’t gluten free). I used to eat semolina made by my Mum, with cinnamon or raspberries or homemade strawberry conserve. Now I cannot have it, due to containing gluten. To be honest, this polenta has a very similar texture and taste.

Ingredients for 1 serving of a Low FODMAP orange infused polenta:
40 g dry polenta
200 ml 2% milk, lactose free
100 ml water
2 flat tsp. brown sugar
a pinch of cinnamon
less then 1 tsp. freshly grated orange zest
Instructions for a Low FODMAP orange infused polenta:
1. Bring the milk and water to the boil in a small pot.
2. Add dry polenta, sugar, cinnamon and orange zest. Be careful with orange zest, it is a powerful aroma and it can overpower the rest of ingredients.
3. Simmer for 3-5 minutes.
4. Serve in a bowl, with more orange zest on top.
