My low FODMAP Nicoise salad is my version of the famous Nicoise salad. I used fresh, local ingredients (apart from lemon ad tuna, of course;).

This salad is:
rich in Protein
contains around 3 portions of veg

Ingredients for 1 large serving of My low FODMAP Nicoise salad:

2 cups green lettuce
80 tuna in oil, canned
1 large boiled egg
2 spring onions, green parts only
100 g green beans (I used a local, yellow variety – but to be sure, you can use the green one).
100 g baby potatoes
1 whole tomato (82 g)
60 g cucumber
1 tbsp lemon juice
salt, pepper to taste

Instructions for 1 large serving of My low FODMAP Nicoise salad:

Wash all veg.
Boil egg in a small pot and potato in a bigger, when in is nearly ready, add green beans and cook until soft but still crunchy.
Assemble a salad with lettuce leaves, chopped tomato and cucumber. Add boiled ingredients.
Drizzle with lemon juice.
