If you ever feel like a sweet breakfast, but you want it to be light, then you need to try out this recipe for a Sweet Omelette with Berries (Low FODMAP). It is an excellent, fluffy omelette with vanilla yogurt and fruit, drizzled with maple syrup. Tasty!

INGREDIENTS FOR A SWEET OMELETTE WITH BERRIES (Low FODMAP), 1 PORTION
2 eggs, beaten, with 1 tsp. sweetener
Fry Light butter spray
Homemade vanilla yogurt*
80 g of Low FODMAP of berries, for example strawberries and blueberries.
1 tbsp. of maple syrup to drizzle
*Homemade vanilla yogurt:
150 g lactose free yogurt, preferably Greek style
1 tsp vanilla extract, 2 tsp sweetener, i.e. Stevia This is a bigger portion, use some for the recipe and keep the rest for the fridge for example to eat topped with fruit or on its own.
INSTRUCTIONS TO MAKE A SWEET OMELETTE WITH BERRIES:
Whisk the eggs with the sweetener.
Heat up a small non stick pan on a medium heat, then spray it with oil.
Pour the egg mix into a pan and spread evenly. Fry on both sides until the omelette is golden and cooked through.
In the meantime prepare the vanilla yogurt. In a bowl or a cup mix the lactose free yogurt, vanilla extract and a sweetener.
When the omelette is cooked, place it in a breakfast plate, spread the yogurt on top, sprinkle with strawberries or blueberries and drizzle with maple syrup.
