Sweet Omelette with Berries (Low FODMAP)

If you ever feel like a sweet breakfast, but you want it to be light, then you need to try out this recipe for a Sweet Omelette with Berries (Low FODMAP). It is an excellent, fluffy omelette with vanilla yogurt and fruit, drizzled with maple syrup. Tasty!

Ingredients
  

  • 2 eggs beaten, with 1 tsp. sweetener
  • Fry Light butter spray
  • Homemade vanilla yogurt*
  • 80 g of Low FODMAP of berries for example strawberries and blueberries
  • 1 tbsp. of maple syrup to drizzle
  • Homemade vanilla yogurt:
  • 150 g lactose free yogurt preferably Greek style
  • 1 tsp vanilla extract
  • 2 tsp sweetener i.e. Stevia

Equipment

  • whisk
  • Medium bowl
  • small bowl or a cup
  • small non stick pan
  • spatula

Method
 

  1. Whisk the eggs with the sweetener.
  2. Heat up a small non stick pan on a medium heat, then spray it with oil.
  3. Pour the egg mix into a pan and spread evenly. Fry on both sides until the omelette is golden and cooked through.
  4. In the meantime prepare the vanilla yogurt. In a bowl or a cup mix the lactose free yogurt, vanilla extract and a sweetener.
  5. When the omelette is cooked, place it in a breakfast plate, spread the yogurt on top, sprinkle with strawberries or blueberries and drizzle with maple syrup.
  6. Enjoy!
