This Low FODMAP Cod Pizza is an ideal, quick meal for lunch or warm supper. You can serve it with a fresh salad.
Below is a baked cod pizza served with a grated celeriac and carrot salad.
The idea for this recipe came to me for main two reasons. One is because the traditional pizza is based on a wheat flour, which intake is limited on a Low FODMAP diet. Even though I can have my Spelt Sourdough Pizza, I don’t always have time to prepare it. I am also trying to eat a balanced diet, therefore this is much lighter version than a traditional pizza.

INGREDIENTS FOR A COD PIZZA (2 portions):
2 cod fillets, fresh or frozen
1 large tomato, for example a beef tomato
6 black pitted olives, chopped
few fresh basil leaves
salt, pepper to taste
60 g mozarella cheese (30 g in each pizza)
INSTRUCTIONS TO MAKE A Low FODMAP COD PIZZA:
If you are using a frozen fillet, you need to defrost it first.
Preheat the oven to 180 degrees C.
Dry the fish and season on both sides with salt and pepper.
Prepare a small baking tray. Spray it with oil spray. Place the fillets on the tray.
Slice the large tomato and place the slices on top of the fillets. Then put few chopped basil leaves on top, followed by chopped olives and in the end covered by slices of mozarella cheese.
Place it in a preheated oven and bake for about 25 minutes (depending on your oven) or until the fish is cooked through and the cheese has melted and started to have golden colour in places.
