I found this amazing purple Chinese cabbage on the market and I decided to do something with it! This time it was turned into a Low FODMAP tuna salad, gluten, lactose, garlic and onion free.
It is good to make whenever you are out of ideas what to prepare for lunch. At least for me, because those are my staple fresh vegetables in my fridge. You can also replace Chinese cabbage with lettuce of your choice, of course.
This salad is very easy to put together and can be an option for lunch from the box.

Ingredients for 1 Low FODMAP tuna salad:
100 g purple Chinese cabbage (but you can use the usual one as well)
80 g canned tuna
60 g cucumber
41 g fresh tomato
3 radishes
1 spring onion, green part only
salt and pepper to taste
Instructions for 1 Low FODMAP tuna salad:
Wash and chop all vegetables. Arrange in a plate, top with drained tuna and spring onion greens. Easy!
