Just to remind, a Low FODMAP chicken broth or stock has to be without onion or garlic and with adequate portions of Low FODMAP vegetables, such as green leaves of the leek. This Simple Chicken Noodle Soup (Low FODMAP) is based on my Low FODMAP Chicken Stock/ Broth recipe, but with added Low FODMAP noodles or pasta of your choice. You can use up the vegetables from the broth this way and my favourite is definitely a carrot, which is a very versatile, Low FODMAP vegetable. This Chicken Noodle soup tastes great even without onion or garlic, which for many people is a very essential ingredient. But for us, on a Low FODMAP Diet, we need to find flavours elsewhere.
This Simple Chicken Noodle Soup is mild, but still full of flavour, since it is my version of a Polish traditional “rosół” soup. It has nothing to do with spicy Thai noodle soups. It has been prepared in a Tower pressure cooker, very similar to the one below.
You can also cook it in a usual large pot, but the cooking time will become much longer.
It is a great dinner for two days. It will keep well in the fridge, also you can make other soup the next day, treating this broth as a base.

a small handful of fresh parsley, for serving

This chicken soup “rosół” is best served with carrots and maybe some other vegetables from the broth as well as shredded chicken from the broth.
You just need to boil the pasta or the noodles, according to the packaging instructions. Serve in a bowl with pasta or noodles and sprinkled with fresh chopped parsley.
