I love broccoli and stilton soup, I used to buy it in a carton, when had no time for cooking. Now it is impossible, due to Low Fodmap eating. Even though I am in a modified diet stage, I know that I can’t eat too much of broccoli, because it would result in me feeling not so well. Therefore, I need to prepare it myself, not that it is a sacrifice, because I love cooking. That is how I came to make this Low FODMAP broccoli and carrot soup.
I cannot find here Stilton cheese, so I decided to make it with an Edam and it worked very well!
Ingredients for 1 portion of a Low FODMAP broccoli and carrot soup:
45 g fresh broccoli
80 g potato, peeled
61 g carrot
30 g edam cheese, grated
salt, pepper to taste
15 g sour cream

Instructions to make 1 portion of a Low FODMAP broccoli and carrot soup:
Wash, peel and chop small the potato and dice the carrot.
Place the potato and carrot in a small pot and cover it with water. Add salt and pepper.
Simmer on low for 30 – 40 minutes.
Wash broccoli and cut it into a small florets.
Add the broccoli to the pot with potatoes and carrots. Simmer for another 10 – 15 minutes.
At this point you can blend some of the soup, but it is not necessary.
Mix in the sour cream and sprinkle with the grated cheese.
