Sweet Omelette with Berries (Low FODMAP)

If you ever feel like a sweet breakfast, but you want it to be light, then you need to try out this recipe for a Sweet Omelette with Berries (Low FODMAP). It is an excellent, fluffy omelette with vanilla yogurt and fruit, drizzled with maple syrup. Tasty!

small non stick pan

- 2 eggs beaten, with 1 tsp. sweetener
- Fry Light butter spray
- Homemade vanilla yogurt*
- 80 g of Low FODMAP of berries for example strawberries and blueberries
- 1 tbsp. of maple syrup to drizzle
- Homemade vanilla yogurt:
- 150 g lactose free yogurt preferably Greek style
- 1 tsp vanilla extract
- 2 tsp sweetener i.e. Stevia
Whisk the eggs with the sweetener.
Heat up a small non stick pan on a medium heat, then spray it with oil.
Pour the egg mix into a pan and spread evenly. Fry on both sides until the omelette is golden and cooked through.
In the meantime prepare the vanilla yogurt. In a bowl or a cup mix the lactose free yogurt, vanilla extract and a sweetener.
When the omelette is cooked, place it in a breakfast plate, spread the yogurt on top, sprinkle with strawberries or blueberries and drizzle with maple syrup.
