Sometimes you can create an amazing combination of flavours just by using up what you have. This Low FODMAP Smoked Mackerel and Feta Salad was made in tomato season, when not only they are cheaper, but also taste great.

Equipment

  • knife
  • scale
  • Tablespoon, teaspoon

Ingredients
  

  • 150 g fresh tomato
  • 80 g smoked mackerel
  • Feta Cheese 40 g
  • 6 Radishes raw
  • 1 tbsp Basil fresh
  • 10 servings of Olive Oil Spray
  • a pinch of Salt
  • a pinch of Black Pepper

Instructions
 

  • Slice the tomato in thick pieces. Place them in a plate, together with a sliced radishes.
  • Flake the smoked mackerel and place on top. Cube the feta cheese and sprinkle on top of the salad.
  • Season to taste and decorate with a basil leaves.
  • Enjoy!

Notes

For this recipe and in general I would suggest using original Greek feta cheese and not "Feta style" cheese. It is because the original one has been tested for FODMAPs.
