Tomato spinach and herb salad (low FODMAP)

This tomato, spinach and herb salad (low FODMAP) is a great, healthy breakfast or a light lunch.

Equipment

  • knife, medium bowl, chopping board

Ingredients
  

  • 120 g fresh tomatoes

  • 100 g cucumber

  • 1 tsp. fresh thyme

  • 1 piece spring onion, green part only

  • 1/4 cup baby spinach

  • 10 sprays olive oil spray

  • 1/2 tbsp lemon juice

  • a pinch salt
  • a pinch black pepper

Instructions
 

  • Simple!
    First, wash all of the vegetables and herbs.


  • Layer the spinach in the bowl. Top it with a chopped tomato and cucumber.

  • Pick small leaves from the thyme stalks. Chop the green part of a spring onion. Add both to the salad.

  • Squeeze some of the lemon juice on the salad, spray with an olive oil, season to taste and mix it all.

  • Enjoy!
