I really love this Low FODMAP Hot red pepper and tomato soup. It takes no time to prepare and somehow it tastes similar to my daughter’s favourite tinned tomato soup. The difference is that this one is made fresh, in your kitchen and you know exactly what goes inside. This is very important in a Low FODMAP diet.

So next time you are craving a tinned tomato soup, don’t buy a shop one. It contains milk, which has lactose, as well as “spice extracts” – which might as well include onion or garlic extract.


Therefore a homemade tomato soup will be better for you.

This recipe is inspired by Gousto recipe and is adapted to a Low FODMAP diet.

Ingredients for 3 servings:

400 g homemade, Low FODMAP, vegetable stock
270g – of tinned tomatoes (in season you can use fresh tomatoes, for a better flavour, but in winter I much prefer good quality tinned tomatoes)
 
2 red peppers
1/2 tsp. hot smoked Spanish paprika (it is optional, if you don’t like spice, just omit it.)
10 sprays of oil spray
 
salt, pepper to taste
 
1 tsp. fresh dill, chopped, to sprinkle the soup

Instructions for 3 servings:

Preheat the oven to 180 degrees C.
Add roughly chopped peppers to a baking tray, with smoked paprika and spray with oil. Roast for 25 min.
Add low FODMAP vegetable stock to a pot, with tomatoes.
When peppers are ready, add them to a pot and simmer for 5-10 min. 
Blend with a hand blender.
 
Serve in a bowl with fresh dill on top.
